Oysters are a favorite for the Kentucky Derby, and this dish is a savory addition to a Derby party. It’s a flavorful and hearty addition with eight generous servings. Plus, you can easily prepare half the ingredients for a small, cozy dinner, which is what I did to photograph these recipe instructions.

Parmesan Crusted Oyster Casserole Recipe
If you love an “it’s so easy even I’ll make it” recipe, you are in luck. All the ingredients are easily found at your local grocery store and can be combined quickly, so prep time is minimal. The recipe is a mix of rich and creamy ingredients with a twist of tangy flavors. The crunchy parmesan topping is a tasty finish to this savory dish.
Purchase fresh oysters with juice usually found in the fresh seafood department in most grocery stores. Separate the oysters and set aside the juice. Dice the oysters into smaller pieces.
Other ingredients include:
- Oysters and Juice separated
- Cream Style Corn
- Butter
- Saltine Crackers
- Shallots (finely Chopped)
- Heavy Whipping Creme
- Worcestershire Sauce
- Pasley Flakes
- Lemon Juice
- Parmesan Cheese (Shaved)
- Panko
- Chives to garnish is desired.
Prepare Oyster Corn Casserole
First, let’s prepare all the layers of Oyster Corn Casserole.
Begin by melting the butter in the microwave and crush the crackers. Pour the melted butter over the crackers in a mixing bowl. Toss to cover the crackers.
Chop the onion finely. Toss onion and parsley flakes with the crackers.
Next, add the oyster juice to a large measuring cup. Add the juice of one lemon, the whipping cream, and worshestershire sauce. Stir together.
Layer the Baked Oyster Casserole
Grease your baking dish and add the creamed corn to the bottom.
Next, add half of the oysters to the top of the corn. Then, add half of the cracker mixture over the oysters.
Then, you will add a second layer. Spread the remaining oysters over the crackers. Then, add the remaining cracker, butter, and onion mixture over the top.
Finally, pour the oyster juice mixture evenly over the oyster corn casserole layers.
Add Parmesan Crust to the Casserole
Finally, add the parmesan crust to the baked oyster casserole.
Sprinkle a light coating of panko over the top of the casserole. Then, add a layer of shaved parmesan cheese.
Cover the Oyster Casserole with aluminum foil and bake in a pre-heated 400-degree oven for 25 minutes. Then remove the foil and bake the oyster casserole for another 25 minutes. Check to be sure the baked oysters don’t burn or scorch.
NOTE: The below casserole is half of the recipe with only four servings.
Easy Parmesan Crusted Oyster Casserole Recipe
Rich and flavorful oyster and corn casserole topped with fresh parmesan cheese.
Ingredients
- 2 cups crushed saltine crackers
- 1 cup melted butter
- 2 - 8 oz. Fresh Oysters
- 2 - 8 oz. cans of creamed corn
- 1 1/2 Tablespoon Heavy Whipping Cream
- 1 teaspoon Worcestershire sauce
- 1/2 of a lemon squeezed
- 2 tablespoons chopped shallots
- 2 Tablespoons dried parsley flakes
- 1/4 cup shaved Parmesan Cheese
Instructions
- Preheat oven to 425 degrees
- Separate the oysters and juice. Set aside the oyster juice.
- Cut oysters into 1/2 or 1/3's
- Crush Crackers and mix with melted butter
- Chop Shallots and add to the cracker mixture along with parsley flakes.
- In another bowl, mix together Heavy Cream, Worcestershire Sauce, Lemon Juice, and Oyster Juice.
- Grease 9x13 baking dish.
- Line bottom with cream corn
- Add 1/2 of the oysters on top
- cover with 1/2 the cracker mixture
- Add a second layer of oysters
- and then layer the top with the remaining cracker mixture.
- Pour the oyster juice mixture over the top of crackers to cover
- Sprinkle with Panko
- Top with shaved parmesan cheese
- Cover and bake at 425 degrees for 25 minutes
- Uncover and bake for another 25 minutes
How To Serve Baked Oyster Casserole at a Kentucky Derby Party
If you are planning to serve your baked oyster casserole for a dinner party or a Kentucky Derby Party, consider using individual compote or martini glass servings.
Scoop a serving into the glass and garnish with chopped chives.
In addition, you can have guests serve themselves from the casserole dish. Sprinkle the top of the Parmesan Crusted Oyster Dish with chopped chives or fresh parsley.
