They are low in calories and nutrient-rich.

- Fat – 0.2 grams
- Fiber – 2 grams
- Vitamin C – 6% of the RDI
- Folate – 20% of the RDI

- Phosphorous – 4% of the RDI

Beet Salad, Goat Cheese & Fruit Recipe
First, this recipe can be adjusted with ingredient options if you prefer. I’m sharing how we usually make this salad, but you can substitute any of the greens, nuts, or fruits to suit your taste buds better.
Beet Salad Recipe Ingredients
- 2 – red beets
- 2 – golden beets
- 1 cups sliced strawberries
- 1/2 cup raspberries
- 1/2 cup blackberries
- 1/2 cup pecans
- 2-3 green onions chopped
- 2 oz. crumbled feta cheese
- Fresh Spinach
- Briannas Blush Wine Vinaigrette Dressing
Begin by cooking the beets.
Place beets in a baking dish with about 1/2 inch of water. Bake for 1 hour at 350 degrees or until you can pierce with a fork easily.
It’s best to cook with skin on and then peel after cooking.
Next, prepare all the other ingredients while allowing the beets to cool.
Place a thin layer of fresh spinach on a large platter.
Wash all the fruits and onions, then slice the strawberries & onion.
Prepare the beets & fruits
Once the beets are cooked, peel, thinly slice, and add to a medium mixing bowl.
Next, add all ingredients except the feta cheese to the mixing bowl.
Salad Dressing
We have tried different salad recipes for this recipe but find that Brianna’s Blush Wine Vinaigrette Dressing is delicious mixed with these ingredients.
Pour approx. 4 Tbs. of dressing over the beet, fruit, onion, and nut mixture.
Toss until coated.
Finally, add the mixture to the bed of Spinach and sprinkle with the crumbled goat cheese.
What a beautiful salad.
Use salad tongs to add to individual bowls. Makes 6 generous servings.

Beet, Goat Cheese, & Fruit Salad Recipe
Easy, healthy beet & fruit salad with goat cheese, pecans, and spinach.
Ingredients
- 2 - Fresh Red Beets
- 2 - Fresh Golden Beets
- 1 Cup Fresh Strawberries Sliced
- 1/2 Cup Fresh Blackberries
- 1/2 Cup Fresh Raspberries
- 2 oz. crumbled goat cheese
- 1/2 cup pecans
- 2-3 Chopped Green Onions
- Fresh Spinach
- 4 tbs. Brianna's Blush Wine Vinaigrette
Instructions
Bake Beets in the oven with approx. 1/2 inch of water at 350 for 1 hour or until done.
Wash and Dry all Fruit & Vegetables
Slice onion and strawberries
Lay a thin bed of spinach on a large platter
Allow beets to cool. Peel and slice thinly.
Add beets, fruit, onion, and nuts to a medium size mixing bowl
Toss with approx. 4 Tbs. of Salad Dressing
Add mixture to the bed of spinach
Top with crumbled feta cheese.
Enjoy.
Notes
