Ingredients for Baked Chicken Reuben
This is one of the easiest “it’s so easy even I’ll make it” recipes ever. Just 5 simple ingredients, and you have a delicious meal.
You should use thin chicken breast or chicken breast tenders for this dish. In addition, you want to be sure the sauerkraut is drained and very dry because you don’t want too much liquid. I use a paper towel to squeeze out any excess moisture.

Layer Ingredients
First, layer all the ingredients in an oblong baking dish to create this easy Baked Chicken Reuben.
Begin with a single layer of thin chicken breasts or breast tenders. If your chicken breasts are very thick, you can easily slice them in half.
Then cover the chicken with the sauerkraut and divide the cheese slices so that they cover the entire top of the sauerkraut.
Finally, spread the 1000 island salad dressing evenly over the cheese for the last layer.
Garnish if desired
Once the Reuben is cooked, you can garnish with fresh parsley if desired.

Baked Chicken Reuben
Easy Baked Chicken Reuben
Easy, delicious main dish, great for a large gathering.
Ingredients
- 8 Small Boneless Chicken Breast
- 16 oz. Sauerkraut
- 6 slices Natural Swiss Cheese
- 1 - 8 oz. 1000 Island Salad Dressing
- 1 tbsp Chopped Parsley
Instructions
- Preheat Oven 375 degrees
- Add One Layer of Chicken Breast to greased baking dish
- Rinse & drain sauerkraut, squeezing all excess moisture from the kraut.
- Sprinkle Sauerkraut over top of Chicken Breast.
- Cover with Cheese slices
- Pour bottle of Thousand Island dressing over the top
- Bake 45 minutes
Notes
Chicken Breast should be small and thin. If necessary, cut the Chicken Breast in half for thinner layers or use Chicken Breast Tenders.
