This refreshing and flavorful salsa recipe is the perfect way to enjoy the flavors of summer. The tomato, avocado & corn salsa is a delicious go-to recipe for any occasion.
Most every ingredient is already in my pantry, and I can throw the recipe together in about 15 minutes and be out the door to a friend’s house.
In addition, you can substitute the ingredients for fresh veggies in the summer months.
One thing I love about entertaining with our close friends is the hostess doesn’t have to do all the work. Just casual spur-of-the-moment gatherings and everyone brings something to share.

Fresh vs. Canned Salsa Recipe
First, the Tomato, Avocado & Corn Salsa recipe is really delicious using canned vegetables.
However, fresh is yummy when you have the time to plan ahead, and veggies are in season.
One reason I love this recipe so much is that I usually have most of the ingredients in my pantry. It’s perfect for a last-minute side dish or appetizer.
The Fresh Avocado Secret
You do need fresh avocados for this recipe, however, you don’t want them to be green or overly ripe. How do you tell if the avocado is just right?
First, the peel on the avocado should be slightly brown. If the peel is still green, you will see that it is hard on the inside.
In addition, the avocado should be slightly soft but not mushy. In order to tell, hold the avocado in your hand and lightly squeeze. If there is a slight give to the peel, it’s most lightly perfect.
How To Ripen Avocado Quickly
If you purchase green avocados, you may need to wait a few days before making this recipe. However, place the green avocado inside a brown paper bag to speed up the ripening process.
I’ve also heard that placing a banana in the bag with the avocado will make it ripen even faster. I’m so sure if that works, but it can’t hurt.
Tomato, Avocado, & Corn Salsa Recipe
When using canned corn for the Avocado & Corn Salsa, be sure to drain the corn. In addition, the black beans should be drained and rinsed thoroughly using a colander.
Next, peel the avocado and dice. Be sure to add to the mixture immediately to avoid the fresh avocado from turning brown. The lime juice will prevent the fresh ingredients from turning brown.
You can substitute ingredients to taste or add items such as jalapenos, red peppers, etc.
Mix all the ingredients together, place in an airtight container, and refrigerate until ready to serve. I like to serve with Tostitos Scoops.
You can serve in a chips and salsa serving dish.

Tomato, Avocado, & Corn Salsa Recipe
Easy Salsa Recipe that can be made with fresh veggies or canned.
Ingredients
- 2 - Cans Shoe peg Corn or 3 Ears of Fresh Corn Cooked
- 1 - Can Diced Tomatoes or 2 Fresh diced tomatoes
- 2-3 Ripe Avocados diced
- 1 can black beans, rinsed and drained
- 1 red onion diced
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon minced garlic
- 4-8 drops of hot sauce (to taste)
- 1 tablespoon ground cumin
- 1- tsp. chili powder
- 4 tsp. dried oregano
- 1/2 cup lime juice
- Salt to taste
Instructions
- Mix all ingredients in a large mixing bowl
- Cover and refrigerate until ready to serve
- Serve with corn chips
Notes
You can add additional ingredients if desired.
