This recipe uses Jiffy Corn Bread Mix, but the additional ingredients set this corn bread recipe apart.
In addition to the cornbread mix, you will add creamed corn and sour cream to achieve a sweet, moist, and delicious muffin.
You can easily dump ingredients into a large mixing bowl within 5 minutes to start your delicious muffins.

This winter cornbread muffin recipe has a couple of options.
One, you can either make 12 large muffins or 24 mini muffins.
In addition, you can add jalapeño slices to the top of your muffins if desired. I added the jalapeños 1/2 of my mini muffins.
I prefer the mini muffins because I like the bite-size serving better.

Sweet Corn Bread Muffins
This easy to make corn bread muffins recipes is a twist on traditional cornbread with the addition of sweet cream corn. It's a southern tradition that I know you will love.
Ingredients
- 1 - Box Jiffy Muffin Mix
- 1 - large egg, beaten
- 1/2 - large can of cream style corn
- 1/2 - cup sour cream
- 1/4 - cup melted butter
Instructions
- Preheat Oven 350 degrees
- Add all ingredients in a large mixing bowl
- Stir until batter is slightly lumpy
- Grease muffin tins
- Pour batter into muffin tins approx. two thirds full
- Bake for 15 - 25 minutes until tops are golden brown
- Double check - If making 12 large muffins, slide a toothpick into a center muffin until it comes out clean.
Notes
You can use either one large muffin tin or two small muffin tins.
You can a jalapeno pepper to the top of each muffin if desired.
